Slowcooker Veggie Chili

Gotta love beans!
If your are short on time this holiday season, try this recipe! It's really quick to put together and full of flavor.

1.5 cups sweet onion, chopped (1 medium onion)
1 cup red bell pepper, chopped (1 medium pepper)
2 cans (14.5 ounces) kidney beans, drained and rinsed
1 can (14.5 ounces) cannellini beans, drained and rinsed
1 can (14.5 ounces) diced tomatoes
2 cups corn (frozen)
1 cup mild salsa
2 cups vegetable broth
sea salt and chili powder, to taste

1. Combine all ingredients in a slow cooker.
2. Cook on low for 6-8 hours.
3. Season with chili powder and salt to taste.

Additional toppings: sour cream, plain yogurt, shredded cheddar cheese.
